Spicy Korean Pork Gochujang Noodles

Spicy Korean Gochujang Noodles with pork broccolini and a crispy fried egg
This serves 2-4 people depending on portion size
500g pork mince
5 cloves garlic minced
1 brown onion sliced
1 cup shredded carrot ( I buy this pre shredded from my local supermarket. Easy. )
2 handfuls fresh Spinach
1/2 bunch broccolini slice the stems diagonally and leave the florets whole
400g wok ready Udon noodles ( squeeze the noodles in the packaging to separate then remove from packaging ready for use )
2-4 Eggs for frying
Toasted sesame seeds to garnish
Sauce
1/4 cup gochujang
4 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons cooking sake
1 tablespoon rice wine vinegar
1 teaspoon sugar
1 tablespoon sesame oil
1/4 teaspoon salt
Mix all the sauce ingredients together in a bowl.
Heat up a large frying pan to high, add a little oil with the pork mince. Cook the pork until you get some nice colour and flavour happening, add the onion, garlic, carrot, broccolini and Spinach and stir fry for 5- 10 minutes or until the broccolini is cooked to your liking. Add the Udon noodles and stir fry for a minute then add the sauce, stir well for a minute then turn off the heat.
To cook the eggs heat up a fry pan really well, add a little oil then fry the eggs to your liking.
Serve the noodles in a bowl, top with the fried egg and sprinkle with sesame seeds. Enjoy!
