Creamy garlic prawns served on top of beef schnitzel

 

24 raw prawns peeled and devained

2 tablespoons butter

1 tablespoon oil

2 garlic cloves minced

1/2 cup dry white wine optional

400ml cream

1/2 cup grated parmesan cheese

Fresh chopped chives

Salt and pepper to taste

 

Add butter, garlic and oil to a saucepan and saute until garlic is just starting to turn golden then add the white wine, simmer for a minute then add the cream. Simmer for a few minutes then add the chives and Parmesan, taste and season with salt and pepper. Now add prawns and gently simmer on a low heat until prawns are cooked. If your sauce is a little thick you could add a few more tablespoons of cream or some chicken stock to thin out. Enjoy!
