Quick Easy Prawn Avo Salad š
250g cooked jumbo prawns cut into small bite size pieces
60g pack mixed spinach and rocket salad leaves
1 Avocado cut into bite size pieces
1 small red onion sliced
Small handful of fresh herbs chopped ( I used a mix of chives, parsley, coriander and mint from my garden )
Sauce
1/2 cup whole egg mayonnaise
Juice of half a lime
2 tablespoons Tabasco or add to taste
salt and pepper to taste
Mix all sauce ingredients together. Add as much or as little Tabasco as you wish. Taste and season with salt and pepper. If you do not like spicy at all you could just replace this with thousand island dressing and add some fresh lime juice, salt and pepper.
In a salad serving bowl first add the spinach and rocket, top with the avocado and red onion. Pile the prawns In the middle of the salad bowl. Sprinkle over fresh herbs and finish with a drizzle of the sauce. Serve fresh! Enjoy.
