Bang Bang Salmon Sushi Bowl šŸ„£ šŸ˜‹ delicious!


2 salmon fillets skin on or off ( cut each fillet into 4 pieces )


Marinade


2 tablespoons honey warmed

2 tablespoons sriracha sauce or sweet chilli sauce


Mix together the warm honey and sriracha, add the salmon pieces and allow to marinade for 30 minutes minimum.


Quick pickled cucumber


1/4 cup rice wine vinegar

3/4 tablespoon sugar

1/4 tablespoon salt


Mix together the pickle ingredients. Add sliced cucumber or any veg and allow to pickle for atleast 30 minutes. Drain from pickle before serving


You will also need these ingredients


Cooked sushi rice or jasmine rice


Fresh sliced Avocado


Fresh chopped spring onion


Toasted sesame seeds


Sriracha or Chilli mayonnaise


Garlic aioli


Pan fry the salmon for about 3 minutes on a high heat. I cook 2 minutes 1 side, turn and cook 1 more minute. Then pour in any leftover marinade and allow the sauce to cook in residual heat.


Serve sushi rice in 2 bowls. Top with 4 pieces each of salmon, half a sliced avocado and some of the pickled cucumber.

Finish by sprinkling over spring onion and toasted sesame seeds.

Drizzle over some spicy mayo and garlic aioli šŸ˜‹
