Pork Sambal Udon Noodles

Pork sambal noodles

 

500g Pork mince

1 brown onion sliced

1 bunch Chinese broccoli sliced ( any other green veg will be fine if you can't get this )

5 cloves garlic minced

2 packets wok ready Udon noodles ( depending what brand you get, gently squeeze the noodles to separate them without breaking. I use kan tong )

Toasted sesame seeds for garnish

 

Sauce

 

1-2 tablespoons Sambal Oelek ( chilli paste. Can leave this out if you don't like spicy)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sugar

1 tablespoon dark soy sauce

2 tablespoons fish sauce

1 tablespoon sesame oil

1/2 teaspoon pepper optional

Mix all sauce ingredients together in a bowl.

Heat up a fry pan to a high heat then add oil. Brown the pork ( I leave the mince in bigger chunks so it can be eaten with chopsticks ).

Once the mince is nicely browned add the onion garlic and broccoli, stir fry for 5 minutes or until the broccoli is cooked to your liking.

Add the noodles and stir fry for a few minutes then add the sauce, turn off the heat stir well, and serve immediately with toasted sesame seeds sprinkled over top.
