Pasta salad my way
​
250g fusilli or spiral pasta ( I do recommend not cooking this aldente for salad. Give it a few minutes more than what the packet says. Cook pasta drain and rinse under cold water, allow to cool before assembling salad. )
1 small packet pre shredded coleslaw
1 red onion sliced
1/2 red capsicum sliced
1 handful each of fresh Spinach and rocket
optional
1/4 cup stuffed olives optional
Dressing
1 cup whole egg mayonnaise
3/4 cup Italian salad dressing
1 tablespoon tomato paste
Pinch dried Italian herbs
Salt and pepper to taste

Mix the dressing ingredients together in a large bowl then add in the rest of the ingredients. Mix well. Store in the fridge but allow to come to room temperature for at least 30 minutes before serving.
