Iced buns my addiction!!

 

This recipe makes 2 buns. I usually give one away to a friend.

 

Step 1 yeast

 

1 1/2 cups warm milk ( chuck in the microwave for 45 seconds to warm up, just make sure it is not too hot otherwise it will kill the yeast, should just feel warm to touch )

4 teaspoons dried yeast

1/4 cup castor sugar

 

Place all these ingredients in a bowl, mix with a spoon and allow to sit for 10 minutes.

 

Step 2 dough

 

4 cups 00 or bread flour ( if you can't find this just use plain flour )

2 tablespoons bread improver ( this is sold in most supermarkets in the bread section, it really makes the bread rise more and soft like a pillow, I definitely recommend seeking this out otherwise you can just leave it out )

1 egg

60g butter room temp

1/2 teaspoon salt

3/4 cup sultanas ( these are optional, leave out if you wish )

 

Place the flour and bread improver into a large mixing bowl, add in the butter and rub with your fingers for a few minutes until it resembles bread crumbs.

Now, add in the egg, salt, sultanas and the yeast mix we prepared earlier.

Mix all ingredients together well.

Knead 5 minutes using a mixer or by hand. If the dough is sticking to the bottom of the bowl just keep adding extra flour until it stops sticking to the mixing bowl. If you're mixing by hand you may need to add a little extra flour so it stops sticking to the table.

After this step, oil a bowl and place the dough in bowl.

 Cover with plastic wrap and allow the dough to rise for 1 hour or until it has doubled in size.

After this time take the dough out and divide into 2 pieces.

Grease 2x 28cm/20cm baking trays.

Alternatively you could just make one large bun on a bigger tray or use any tray or baking dish.

After greasing the tray line with baking paper.

Place the 2 dough balls in each tray and flatten out with the palm of your hand so the dough fills the bottom of the tray roughly. Place plastic wrap over both trays and allow the dough to rise for another 30 minutes or so.

 

Step 3 baking

 

Preheat oven to 220 degrees Celsius or 200 fan forced.

 

Once the oven is well heated, remove plastic wrap from both trays and place in the oven for 15 minutes or until the top is golden and sounds hollow when tapped.

 

Step 4 glaze

 

1 teaspoon Gelatine powder

1 tablespoon castor sugar

1 tablespoon water

 

Add all the glaze ingredients to a bowl, heat in microwave for 30 seconds.

Using a pastry brush, brush the top of both buns while they are still warm. Then allow buns to cool completely in baking tray.

 

Step 5 icing

 

2 cups icing sugar

4 tablespoons or so water

1/3 cup or so of desiccated coconut

 

This icing recipe is enough for just one bun, so you'll need to make it twice for both buns or just double up and make it once.

Mix together the icing sugar and water, carefully adding a little water at a time as you just want enough to bring it together into a thick icing.

If you add to much water the icing won't set.

You can add more icing sugar if it's too runny.

Scrape the icing onto the bun with a spatula, spread out well and sprinkle with dessicated coconut.

And you're ready to eat! .
