500g pork belly cut into bite size pieces
1 packet taco or Mexican seasoning
Toasted sesame seeds for garnish
Sauce
1 tablespoon butter or margarine
1/4 cup bull's eye habanero hot sauce or any hot sauce will do
1/4 cup honey
2 cups water
Quick pickle
1/4 cup rice vinegar
1/4 tablespoon salt
3/4 tablespoon sugar
1/2 red onion sliced
2 baby cucumber sliced
Mix together the vinegar sugar and salt, add the red onion and cucumber and place in the fridge whilst you prepare the pork.
Heat up a fry pan to medium high, meanwhile coat the pork belly pieces in the taco seasoning and shake off any excess powder. Add pork belly to hot pan with a small amount of oil and brown for 5 minutes or until you have some nice flavors happening. Now add the sauce ingredients, bring to a boil and turn down to simmer for 1 hour and 15 minutes or until the pork is melting in the mouth and the sauce has reduced to a glaze. Serve the pork belly with a little bit of the reduced glaze then sprinkle with toasted sesame seeds. Drain the liquid from the quick pickles and serve on the side. Enjoy!
