Healthy Chocolate Slice
A Favorite of Mine

Healthy homemade slice
I've adapted this from the original recipe made a few changes and added some nuts
Slice base
1 cup sultanas blitzed in a food processor
6x cholesterol lowering weetbix blitzed in a food processor
4 tablespoons natural smooth peanut butter
1/3 cup cocoa
1/2 cup dessicated coconut
2 tablespoons olive oil
1/2 cup honey
1/2 cup Hazelnuts
1/2 cup Pecans ( these are just the nuts I had In my pantry but any will work for this)
Topping
250g dark choc chips
1 teaspoon olive oil
You will need a slice tin 23x23cm or you could use a loaf tin but the slice will likely be thicker
Blitz the sultanas and weetbix in a food processor then add the peanut butter, cocoa, coconut, olive oil and honey, blitz to combine together or you could mix this by hand.
Line your slice tin with baking paper, place the nuts in the tin and top with the base mix, press down with the palm of your hand until your mixture is looking smooth and even.
Now to make the topping place the dark chocolate and olive oil into a microwave safe bowl and melt by doing 30 second increments until just melted ( don't forget to stir in between 30 second increments ).
Pour the melted chocolate over the base mix and tilt the pan from side to side to distribute the choc over the base evenly.
Place in the fridge to set for a few hours before slicing.
This will last in an airtight container in the fridge for up to a week.
