Chinese Style Curry Beef Stir Fry

Very simple and delicious

 

300g beef rump ( slice thinly and bash with a meat mallet )

 

Beef marinade

 

1 teaspoon cornflour

1/2 teaspoon bi carb soda

2 tablespoons soy sauce

2 teaspoons dark soy

1/4 teaspoon sugar

Combine the beef with the marinade ingredients and allow to marinade whilst you prepare the rest of the ingredients. Doesn't need long to marinade.

 

5 garlic cloves minced

1 small knob ginger minced

1 small brown onion sliced

1 green or red capsicum sliced into strips

 

Sauce

 

4 teaspoons curry powder

1 teaspoon paprika

1 teaspoon sugar

4 tablespoons soy sauce

4 teaspoons dark soy

3/4 cup water

Mix all sauce ingredients together in a bowl.

​

Heat up a fry pan to a high heat.

Add some olive oil and cook the beef until just browned. Now, add the garlic, ginger, onion and capsicum and saute for a few minutes.

Add in the sauce, stir well and simmer for a few minutes until the sauce starts to thicken a little but still saucy.

Serve immediately with Jasmine rice
