Greek salad pasta
​
this has to be my fave pasta salad!
250g fusilli pasta cooked and cooled
1 red onion sliced
1/2 cucumber deseeded and sliced
1 tomato sliced or a handful baby tomato
1 handful fresh parsley chopped roughly
1/2 cup pitted kallamata olives sliced
1/2 cup stuffed green olives or pitted green olives
Sea salt and white pepper to taste
1/4 cup or more of crumbled marinated feta
Dressing
1/4 cup olive oil
2 tablespoons rice wine vinegar
1 teaspoon Italian herb mix
1 clove garlic minced
Mix all of the ingredients together, season with salt and pepper. Best served at room temperature but you can serve cold as well.
