Gochujang Pork Belly with Quick Pickled Veg

Korean Gochujang Pork Belly, Quick Pickled Veg

 

This recipe makes enough for 2 share portions

 

500g pork belly sliced into thin bite size pieces

Fresh chopped spring onion and toasted sesame seeds to garnish

 

Gochujang marinade

 

1 tablespoon gochugaru Korean red pepper powder ( if you can't find this just leave it out )

2 tablespoons gochujang

3 tablespoons soy sauce

2 tablespoons mirin

1 tablespoon honey

1 tablespoon sesame oil

 

Mix together all marinade ingredients add to the pork and allow to marinade for 1 hour

 

Quick pickled vegetables

 

1 carrot peeled and cut into sticks

1/3 cucumber cut into half moons

1/4 cup rice viniger

1/4 tablespoon salt

3/4 tablespoon sugar

Mix together the viniger, salt and sugar, add the carrot and cucumber and allow to pickle for 30 minutes or so. Before serving drain the liquid from the pickle, serve in a bowl

 

To cook the pork heat up a fry pan to medium and cook the pork in batches, I cook the pork 2-3 minutes each side. Serve the pork in a bowl, garnish with spring onion and sesame seeds, I like to dip my pork in sesame oil but you could leave that out if you wish
