Chinese Style Salt and Pepper Squid

Chinese style salt and pepper squid

 

1 packet of frozen kb's brand raw squid strips ( if you can't find this use 2 squid tubes cut into bite size pieces and scored, you could also use pre battered squid if you can find it )

 

Batter

 

1/2 cup plain flour

1/2 cornflour

1 teaspoon bi carb soda

1 teaspoon sugar

1 teaspoon salt

1/2 cup soda water plus a few tablespoons or so

 

To make the batter add all ingredients into a bowl and whisk together, you will most likely have to add more soda water, you want a thick batter but so it still runs off the spoon. Try to add the soda water at the last minute so it doesn't lose its effectiveness.

 

Heat up a deep fryer to 180 degrees celsius, dip the squid strips in batter and gently lower in the oil, fry for 2 minutes.

Do this in batches so the oil doesn't drop in temperature.

Once you have fried all the squid you can then add it all back in one batch a deep fry for a further 2 minutes.

Try to hold off doing this until your ready to eat.

 

Stir Fry

 

5 cloves garlic minced

1 small brown onion diced

1 birds eye chili chopped

1 mild red chili chopped

1/2 green or red capsicum diced

Salt and pepper to taste

 

To finish the dish heat up a fry pan to medium add a tiny bit of oil then add the onion, chili, garlic, capsicum and saute for 5 minutes or so. Add the cooked squid season with a little salt and pepper, taste and add more salt and pepper if it needs it. It's important to taste as you go with the salt and pepper cause it's quite easy to add too much salt and the batter has salt in it already. Serve immediately!
