Chinese Style Salt and Pepper Prawns

Chinese style salt and pepper prawns
my version inspired by takeaway Chinese I had a while back.
Prawn popcorn
24 uncooked prawns cut into small pieces
Batter
1/2 cup plain flour
1/2 cup cornflour
1 teaspoon sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 cup soda water or beer plus a few tablespoons or so
Whisk all batter ingredients together add enough soda water or beer to make a thick batter but it should still run off the spoon.
Dip the prawns in the batter and deep fry in batches on 180 for about 2 minutes a batch. Drain on paper towel
Stir Fry Ingredients
2 fresh chopped chilies
6 cloves garlic minced
1 small handful fresh curry leaves
1 small handful unsalted cashew nuts
1 teaspoon each of salt and freshly ground black pepper
To finish off the prawns heat up a fry pan add oil, stir fry the garlic and chili for a minute careful not to burn, now add the curry leaves and cashew nuts stir for a minute, add the prawns and half of the salt and pepper. Taste and add the rest of the salt and pepper seasoning if it needs it.
Serve immediately!
