Chicken Fajita Pasta

​

This is a meal prep recipe and makes 8 serves or 5 if you prefer larger portions.

​

9x chicken thigh fillets cut into bit size pieces ( you can switch this for 2 large chicken breasts or 3 small chicken breasts if you like )

2 brown onion sliced

2 capsicum sliced

5 cloves garlic minced

2x packets Old El Paso Fajita seasoning

2 tablespoons tomato paste

500g sour cream

250g cream cheese

3 cups liquid chicken stock

500g spiral pasta ( cook according to packet instructions. )

 

Heat up a large fry pan to a high heat. Add the chicken, brown and stir fry until chicken has cooked through.

Add the garlic, onion and capsicum and cook 5 minutes or until onion has softened.

Add the fajita seasoning and tomato paste, stir to coat chicken and veg.

Add the chicken stock, sour cream and cream cheese.

Stir on a medium heat until cream cheese has melted then simmer 5-10 minutes or until sauce has thickened a little.

Now add in cooked pasta stir well. Taste and season with salt.
