Homemade Beef Noodle Soup with Lemongrass, Garlic and Chilli Oil

I used a stock from the freezer saved me a Tonne of time wish you guys could smell it! So good

 

Making the flavored oil

​

2 fresh lemongrass ( bash the thick part of the lemongrass with the back of your knife to break up a little then dice the white part and discard green woody part )

4-6 whole dried red chilli ( dry toast on a hot pan for a few minutes to develop flavor then using a coffee/spice grinder blitz into chilli flakes, or use a morter and pestle. Alternatively you could just buy chilli flakes and add 1 teaspoon but the flavour won't be as good )

5 garlic cloves chopped roughly

1 tablespoon annatto seeds ( if you can find this just add 1 teaspoon paprika )

1/2 cup olive oil

 

Add all ingredients above to a saucepan, sizzle on a medium heat for a few minutes or until you can smell the garlic cooking, make sure you don't walk away as it may burn.

Remove from heat and allow to cool to room temp.

Strain the oil, discard solids and keep flavored oil for use later

 

Cooking the beef

 

1 small beef rump steak per person

 

Slice the rump steak into thin bite size pieces, season well with salt and pepper.

Brown the steak in a hot pan until it's cooked to your liking then set aside

 

The broth

 

1 Litre homemade beef, dashi or chicken stock ( using store bought stock is totally okay )

1/2 teaspoon shrimp paste optional

Heat the stock in a saucepan and add the shrimp paste. Bring to a rolling boil just before serving

 

The rice noodles

​

1 handful dried rice noodles per person

Few drops sesame oil

 

Cook the rice noodles according to packet instructions, drain and place into serving bowls. Drizzle a few drops of sesame oil over the noodles, this adds flavor and prevents sticking.

Set aside while you prepare garnishes

 

The garnishes

 

Fresh lime wedges

Fresh chopped red chilli optional

Fresh sliced red onion

Fresh Coriander

Fresh chopped spring

 

Serving

 

Add the cooked rump steak on top of the cooked rice noodles we prepared earlier.

Place lime wedges on each side of the bowl.

Ladle over the hot broth, add sliced red onion, fresh red chilli, sprinkle over some spring onion then add some fresh Coriander in the middle of the bowl.

To finish spoon over 2 teaspoons of the seasoned oil we made earlier and serve immediately!

 

So good you will make it over and over again!
