Beef Burrito rice bowl 

 

This recipe makes 2- 4 serves depending on portion size

 

500g beef mince 

1 packet Mexican or taco seasoning

4 cups long grain or jasmine rice cooked

1 tin kidney beans drained

1 tin corn kernels drained

1/2 punnet baby tomato chopped

1 small red onion sliced

2 cups cabbage sliced

Pickled jalapenos diced ( add as many or little as you like)

Toasted sesame seeds

Sauce

​

1/2 cup sour cream

1/4 cup mild salsa

Juice of 1 lime

 

Mix all the sauce ingredients together in a bowl

 

Heat up a fry pan, add a little

oil, brown the mince then add the Mexican seasoning plus 1/2 cup water. 

Simmer for 5 minutes or until the water has reduced to a sauce.

Divide the rice between bowls, do the same with the cooked mince and vegetables, spoon over some sauce, sprinkle with sesame seeds if you wish.

 

I like to warm my bowl in the microwave and eat hot but you could serve it cold if you wish.
