Banana cake

 

Cake

Ingredients

​

1 1/2 cups buttermilk ( make this at home by simply mixing 1 1/2 cups milk with juice of 1-2 lemons )

3 cups plain flour

3 ripe mashed bananas

1 teaspoon bi carb soda

1 teaspoon baking powder

3/4 cup butter room temp

1/2 teaspoon Sea salt

1 cup brown sugar

1/2 teaspoon ground cinnamon

3 eggs

1 generous tablespoon vanilla essence

 

Mix all cake ingredients together in a bowl with a wooden spoon or use a mixer.

Spray a round springform cake tin with oil and line the bottom with baking paper.

Preheat oven to 180 degrees celsius.

Pour cake batter into cake tin.

Bake for 1 hour or longer until the centre of the cake is cooked.

Took about 1 hour 20 minutes for me.

Once cake is cooked remove from oven, cover with foil and allow to cool to room temperature completely.

 

Decorating the Cake

 

Chocolate Genache

 

1/2 cup dark choc melts

1/2 cup cream

​

Simply add the chocolate and cream to a saucepan, on a medium heat melt chocolate until smooth, don't simmer. Allow to cool then pop in the fridge to cool and thicken. Pull straight out of the fridge and drizzle over cake before serving. I used the leftover chocolate genache to drizzle over ice cream for the kids.

 

Vanilla Cream

 

600ml cream

4 tablespoons icing sugar

1 tablespoon vanilla essence

I sachet cream stabiliser powder ( if you can't get this just leave it out )

Add the cream, vanilla, icing sugar and cream stabiliser if using to a mixing bowl, whisk to stiff peaks.

2 fresh banana sliced

Maple syrup to decorate

Cut a thin layer off the top of the cake to make it flat.

You can buy cake layer cutters on the internet cheap and they work wonders otherwise you'll have to use a serrated knife. Now cut the cake in half to make 2 layers.

Fill the cake with half the vanilla cream then top with the other half of the cake, spread the other half of the cream over the top of the cake then pop into the fridge to chill for 30 minutes minimum.

You want to leave the final decorations for just before serving as bananas tend to go brown with time.

Cut the banana into medallions placing one of the bananas around the edge of the cake, then pile up the other banana medallions in the middle of the cake.

Drizzle over some of the chocolate Genache and maple syrup .
